Pici Recipe:

2 cups semolina flour

2 cups all-purpose flour

1 to 1-1/2 cups warm water

Mix the semolina and all-purpose flour together.  Dig a small “well” in the middle of the flour.  Add water a little at a time into the well, kneading until a dough is formed. Add more or less water to find the right consistency.

Knead the dough until smooth and elastic (10 minutes).  Wrap the dough in plastic wrap and let it set (30 minutes).

Roll out the dough with a rolling pin and cut into 1/4″ strips, using extra flour so it doesn’t stick. Roll the dough by hand into long, thing strips.

Boil in water for 8 – 10 minutes until the pasta reaches desired texture. Serve with your favorite sauce.
